Meal plan Monday is on Tuesday this week due to my busy weekend! This week’s plan is a seasonal transition because I still have some salads for lunches and smoothies for breakfast but it also includes butternut squash which is more of a fall food. The next few weeks are very busy for me so I am focusing on easy meals and dishes that don’t take a lot of time. I am loving the Modern Alternative Kitchen meal plan link up because it is a new source of ideas and inspiration for my own meal plan.

Meal Plan for the week of 9/24/12:

Sunday (I was out all day at a conference so my family just had leftovers!)

  • Breakfast: Eggs & leftover veggies
  • Lunch: Leftovers
  • Dinner: Leftovers
  • Snacks: KIND Bars (store bought this time!)


  • Breakfast: Eggs & leftover veggies
  • Lunch: Green salad with roasted butternut squash
  • Dinner: Burgers, roasted butternut squash, steamed broccoli
  • Snacks: Trail Mix


  • Breakfast: Smoothies
  • Lunch: Salmon Burgers, steamed broccoli
  • Dinner: Burrito bowls
  • Snacks: Apple & Almond butter


  • Breakfast: Eggs & leftover veggies
  • Lunch: Taco salad with leftover bean burrito bowl items
  • Dinner: Homemade Gluten-free Pizza (first try at this!)
  • Snacks: Trail Mix


  • Breakfast: Smoothies
  • Lunch: Leftover Pizza
  • Dinner: Flourless Chicken Francese, Cauliflower Salad, sauteed greens
  • Snacks: Homemade Popcorn


  • Breakfast: Eggs & leftover veggies
  • Lunch: Green salad with whatever is leftover
  • Dinner: Out at a family dinner
  • Snacks: Apple & Almond butter, popcorn


  • Breakfast: Eggs & leftover veggies
  • Lunch: BBQ Chicken, cauliflower salad
  • Dinner: Out
  • Snacks: Leftover Snacks
