I can hardly believe it but it’s that time of the year. The holidays are upon us. Family gatherings. Holiday entertaining and spending time with friends, family and loved ones. For me, this is the most wonderful time of the year. Holiday decorations are starting to pop up everywhere you go, kids are making their wish lists, families are making holiday plans . . and there seems to be a skip in everyone’s step (or maybe this is just me?).

I love the holidays, mainly because this means I will definitely be spending time with my family and friends. This year, for Thanksgiving, my parents and my sister’s family are coming to my house for the holiday and you can bet there will be a table full of food, food and more food.

I don’t care how much food I have planned for the main and side dishes, there will always be appetizers at my house. This is probably why we start eating at 11am and it continues throughout the day. Cooking and nibbling and cooking and eating some more. I love this. This is my happy place.

And, of course, I needed something fabulous to eat with this bread. I made this Baked Kale and Artichoke Dip and topped it with walnuts. Oh. My. Gawd. I am totally making this on Thanksgiving Day for my family.

Pastry wrapped baked brie with fig jam and Marcona almonds. Kali’s handcrafted Baked Brie is made from the finest ingredients available. Baked Kale and Artichoke Dip

This recipe should make about 3 cups of dip.

Ingredients

  • 1/2 cup shredded mozzarella
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup parmesan cheese; split
  • 1-2 teaspoons dijon mustard
  • 1- 14 oz can artichoke hearts, drained and coarsely chopped
  • 2 cups fresh kale, chopped
  • 1/2 cup red onion, finely chopped
  • 5-6 strips cooked bacon; chopped
  • 1/3 cup walnuts, chopped or crumbled
  • serve with sliced baguette, crackers or parmesan crisps

Instructions

  1. Preheat your oven to 350 degrees. In a large mixing bowl, combine the mozzarella, sour cream, mayo, 1/4 cup of the parmesan and dijon mustard. Stir in the artichoke hearts, kale, red onion and bacon. Spread evenly into a baking dish and sprinkle the remaining parmesan on top.
  2. Bake, uncovered, for about 10-12 minutes. Remove from the oven and sprinkle on the walnuts over the top. Place back into the oven and cook for another 5-6 minutes or until heated through. Serve with sliced baguette, crackers or parmesan crisps.
