Authentic Homemade Chilli Powder Recipe – Fresh, Flavorful & Easy

- 10–12 dried red chillies (adjust based on spice preference)
- 1 tbsp cumin seeds (optional, for earthy flavor)
- 1 tbsp coriander seeds (optional, for depth)
- 1 tbsp garlic powder (optional)
- ½ tbsp oregano or dried herbs (optional for fusion blends)
Select good-quality dried red chillies. Remove the stems and shake out most of the seeds if you prefer a milder blend. Wipe the chillies with a dry cloth to remove any dust.
In a dry pan, roast the chillies over low heat for 2–3 minutes until fragrant. Be careful not to burn them. This step intensifies the flavor and ensures crispness for grinding.
Let the chillies cool completely. Then grind them in a spice grinder or high-speed blender until fine. You can sift the powder for a smoother texture.
If you’d like a blended version, you can also dry roast cumin and coriander seeds, grind them with the chillies, and mix in garlic powder or oregano. Transfer the chilli powder into an airtight jar and store it in a cool, dry place away from sunlight. It stays fresh for up to 6 months, though you’ll probably use it up sooner!
